A clear step up in quality, character and concentration is the NV Fino Arroyuelo en Rama which is bottled unfiltered form the very old solera they have. It has a golden color and an intense nose of esparto grass, soil (chalk) and green olives give it a pungent and clean, somewhat different character that seems somehow related to a white Burgundy. It has a saline palate with a medium-bodied possessing a feeling of volume from the dead yeast's influence from the long biological aging. It is supple and tasty. I like this very much, it's impressive. This is great value. No more than 12,000 bottles per year. - Luis Gutiérrez
