Paixar A Serra se erige como una de las interpretaciones más puras y verticales de la Mencía de altitud en la D.O. Bierzo. Este tinto nace en Dragonte, concretamente en el paraje "A Serra", donde los viñedos desafían la gravedad en laderas con pendientes del 60% que alcanzan los 900 metros sobre el nivel del mar. Las condiciones extremas de este entorno y sus suelos de pizarra descompuesta dotan a la uva de una personalidad única. Tras una delicada crianza de 12 meses en barricas de roble francés de 500 litros, el vino se embotella sin filtrar para preservar su alma intacta. El resultado es una etiqueta de paraje sofisticada, profunda y de una vibrante finura que cautiva desde el primer sorbo.

Truly a wine of the mountain, this captures the wild essence of the higher zones that overlook Villafranca del Bierzo. Aromas of thyme, juniper and lemon verbena mingle with delicate red cherry, a touch of mint and even something resinous, reminiscent of a Christmas tree kept too long! There’s a savoury, meaty edge of rosemary and lamb, with a subtle bloody nuance that adds depth. The palate is intense yet elegant, with soft, fine tannins and vibrant acidity that keeps everything fresh. A wine that beautifully balances power with finesse. 2025-2033
Since 2022, the regular Paixar produced since the turn of the century is now the 2023 Paixar Paraje A Serra. This is the second time it has carried the name from that lieu-dit (or "paraje") in the village of Dragonte on slate-rich soils. It fermented with indigenous yeasts in stainless steel and matured in 500-liter French oak barrels for 12 months. This is a lot more reticent than the Viña de Vaca; it's subtler, serious and terribly elegant and balanced. It has contained ripeness and 13% alcohol, a pH of 3.36 and 5.16 grams of acidity. It's finer-boned, more elegant and precise. The mouthfeel is beautiful, with very fine tannins. The two wines are getting more differentiated, getting their own personality. 12,500 bottles produced. It was bottled in March 2024.
Wild mulberries, boysenberries, lavender and white pepper on the nose. Lovely energy, with a tensioned, medium- to full-bodied palate and very firm, stemmy tannins. Long and pristine. Drink or hold.
