Bajo el sugerente nombre de OVNI (Objeto Volador No Identificado), Eduardo Ojeda y Jesús Barquín, los "cazadores de tesoros" detrás de Equipo Navazos, nos presentan un blanco que rompe con la inercia de la crianza biológica para centrarse en la pureza del terruño. Procedente de viñas viejas del prestigioso pago Miraflores La Baja en Sanlúcar de Barrameda, este monovarietal de Palomino fino fermenta en acero inoxidable, evitando deliberadamente la acción del velo de flor para dejar que la tiza y la salinidad de la albariza se expresen con nitidez.

James Suckling:

Bone-dry, with a nutty and steely undertone, together with sliced apple, citrus and a touch of red apple. Fresh and zesty, with medium body and a creamy yet sapid, mouthwatering finish that has little to do with acidity. Lightly saline at the end. Drink now. Screw cap.

The Wine Advocate:

The unfortified white 2022 Ovni Palomino Fino was produced with grapes from vineyards in Sanlúcar, mostly in Miraflores, from a dry and concentrated year with aging potential. It has a golden color and a serious nose. It fermented in stainless steel with indigenous yeasts and matured mostly without flor in stainless steel, but it always develops some flor, which gives it a slight Sherry twang. It has only 11.5% alcohol and a low pH, 3.04, coupled with 5.69 grams of acidity. The best is the palate and mouthfeel, which are pungent and balanced. 3,000 bottles produced.
