The 2016 Tradicional Brut Nature is the first vintage certified organic, a traditional blend of 51% Xarel.lo, 32% Macabeo and 17% Parellada with 12% alcohol and seven grams of acidity. It was disgorged after more than five years in bottle with the lees. The year was super dry and warm, but the wine is surprisingly fresh; the year was saved by some rain just before harvest. They are slowly increasing the percentage of Xarel.lo and lowering the Parellada, but they don't want to get rid of it, as it adds freshness and lets them pick the Xarel.lo a little riper and still keep the low alcohol in the blend. The wine is the start of a series that have a lot in common, all from their own vineyards. 130,000 bottles produced. The disgorgement date is printed on the back label.
