El Vino de Paraje de Bodegas Bhilar captura a la perfección la esencia del terruño del pueblo Elvillar, al pie de la sierra en la Rioja Alavesa. A partir de viñas viejas y con una precisa crianza en roble francés, este vino enamora por su elegancia, delicadeza y carácter fresco.

The red 2021 Phincas is a village wine from Elvillar produced with grapes from their older biodynamic vines (this vintage is still not certified). The vines are over 55 years of age, and they do tillage by plow horse alongside the vines so as not to disrupt the soil and allow the growth of native herbs in the center of the rows. The blend is 85% Tempranillo with 10% Graciano and 5% Viura, and it fermented with full clusters in concrete and matured in 500-liter barrels for 30 months, and then the wine was blended together and put in a 9,000-liter oak vat for a further six months. It's ripe at 14.5% alcohol, with a pH of 3.68 and 5.62 grams of acidity. This shows a strong balsamic nose with notes of dry aromatic herbs and esparto grass, cinnamon, vanilla, nutmeg and cloves, reminiscent of a vermouth or a Barolo Chinato. The palate is medium- to full-bodied, with abundant, fine and slightly dusty tannins and lively flavors, keeping the freshness and balance in a vintage that for them was one of the best in recent times. 11,088 bottles and 100 magnums produced. It was bottled in October 2025.
