Uno de los vinos españoles mejor valorados en todo el mundo. L'Ermita es una de las grandes joyas enológicas del panorama español con el que Álvaro Palacios ha conseguido estar en lo más alto en cuanto a reconocimientos se refiere. Un Gran Viña Seleccionada que obviamente es de producción muy limitada. Exclusivo, íntimo y armónico. Su autor lo define como “la emoción del clasicismo”. Como curiosidad, en su coupage participan mayoritariamente las variedades Garnacha y Samsó (Cariñena), aunque también hay un pequeño porcentaje de uvas blancas que nacen en el mismo viñedo.

Nariz
Destacan las notas florales con toques de grosellas rojas, fresas maduras, violetas, especias dulces y cáscara de mandarina, además de hierbas silvestres y flores blancas.
Boca
En boca es muy elegante, fresco y crujiente, con abundantes recuerdos de cerezas rojas que se combinan con las notas minerales y sabrosas características del terroir. Sus taninos le aportan una textura fina y granulada y el final es muy largo.
Temperatura de servicio
Se recomienda servir a 16 ºC.
Consumo
Óptimo hasta 2040 aproximadamente si se conserva en buenas condiciones. Se recomienda decantar.
Maridaje
Guisos de carne, aves de tiro y carnes rojas (chuleta de vaca).

Descripción
Viñedo ubicado en Gratallops con laderas muy pronunciadas y orientaciones norte y este. Situado entre 400 y 500 metros de altitud. Brotación a partir del 22 de marzo, floración a partir del 5 de junio y envero a partir del 14 de julio.

4,7 hectáreas.
Edad
Entre 85 y 105 años.
Suelo
De pizarra (llicorella) de estructura laminar, situada de forma vertical y oblicua. La parcela se caracteriza por una veta en diagonal de roca arenisca.
Clima
Continental con influencia mediterránea. En esta añada destaca la sequía, con una pluviometría de 250 litros entre noviembre de 2022 y octubre de 2023. Durante los meses de primavera sólo descargaron 43 litros. Por esta razón, y por primera vez en la historia, tuvieron que incluir técnicas precisas de riego en zonas con baja absorción de agua.
Cosecha
La vendimia manual se llevó a cabo los días 5, 6, 9 y 11 de octubre.
Vinificación
100% despalillado y estrujado suave. Fermentación alcohólica en pequeñas tinas de madera con bazuqueos. Maceración durante unos 45 días aproximadamente. Fermentación maloláctica espontánea en barricas.
Envejecimiento
Crianza en foudres ovalados de roble francés durante 13 meses y dos meses más en hormigón.

Opinión de los críticos

Decanter:

The aromas are delightfully floral, laden with redcurrants and tangerine peel, plus wild herbs and white flowers. Nothing is overdone here – it's so elegant. In the mouth it's fresh and crisp with abundant red cherries, run through with the savoury, mineral notes of the terroir. The tannins add fine texture and grain, and there is a superbly long finish. This really is a wine to meditate over. 84% Garnacha, 13% Cariñena with seasonings of Picapoll and white varieties. A joy from beginning to end, with a glorious future ahead. It's often difficult to approach the great wines with a fair mind, but L’Ermita charms from the first.

The Wine Advocate:

The "gran vinya classificada" single-vineyard 2023 L'Ermita was also bottled and singing. From the 4.7 hectares of the vineyard, they selected four for this vintage, with a blend of 84% Garnacha, 13% Cariñena, 2% Picapoll and 1% white grapes, Garnacha Blanca, Macabeo and PX. It fermented with part of full clusters and indigenous yeasts in oak vats with a longer maceration than in 2022, a total of 42 days, followed by an élevage in French oak oval foudres of 13 months and two more months in concrete. Last year, I found it darker, earthier and a little more rustic than the 2022 wine, but it has bloomed since then. It's much more ethereal and floral, with notes of fresh grape pulp, and it has contained energy, interwoven with spices. This is now somewhere in between the more perfumed and ethereal wines like Dofi and La Baixada and the earthier, darker and more powerful like La Baixada. 4,730 bottles were filled in February 2025. Tim Atkin:

Deep, soulful and really, quite a moving wine. Ripe, earthy strawberries, licorice, wild herbs, graphite and the slightest touch of toasted wood, perfectly integrated into the whole. This is a special wine in every vintage, but it feels like it has a touch more this year. Remarkable. 2024-2044

James Suckling:

Very good depth for a rather delicate, nuanced red from a blisteringly hot and dry year, showing violets, ripe strawberries, blueberries, sweet spices and minerals on the nose. A touch of white pepper as well. The extraction must have been kept low to keep the finesse and fine-grained tannins. Fine mineral tension in the middle. Drink from 2027.
