Este blanco de pueblo de Bhilar muestra su perfil más atrevido. Se elabora combinando Viura y un pequeño porcentaje de Garnacha blanca. Su carácter rompedor está marcado por su breve fermentación con pieles, al estilo de los orange wines. Presenta un paladar austero y mineral que sorprende en cada trago.

David Sampedro is such a great white winemaker that his basic cuvée is better than some bodega’s top release. This is a partly skin-fermented blend of Viura and 15% Garnacha Blanca, all source from his beloved Elvillar. Light, energetic and subtly wooded, it has pithy acidity, layers of pear, grapefruit and struck match and an appealing bitter twist. 2026-29
The white village 2023 Bhilar Blanco is a blend of 90% Viura and 10% Garnacha Blanca from a biodynamic vineyard in the village of Elvillar. The younger whites were harvested very early, and the wine is fresh for a warm year, with good balance between alcohol and acidity; there's 12.41% alcohol, a pH of 3.24 and 5.85 grams of acidity. It fermented with the skins for 20 days of skin contact with indigenous yeasts in concrete, then was pressed and put back in the vat to finish. It then matured in French oak foudres for one year and back in concrete until bottling. It has a subtle orange character of yellow fruit, pollen and earth, a balanced palate with very fine tannins and a final note of tangerine peel that gave it lots of freshness. 18,000 bottles produced. It was bottled in June 2025.
