M. Chapoutier Ermitage L'Ermite es uno de los que más alegrías ha dado a la casa Chapoutier. Elaborado con Syrah, la uva clásica de la AOC Ermitage, se trata de un vino excepcional que ha logrado en varias añadas los ansiados 100 puntos de diferentes críticos. En esta añada 2021 exhibe los concedidos por James Suckling. Un vino joya complejo, con notas minerales, intenso y culminado en un final que es pura seda.

Nariz
Aromas de fruta negra, notas ahumadas y especias.
Boca
Envolvente y profundo, con un tanino de grano fino y pulido. En el final se perciben notas de pimienta tostada y frutas negras.
Temperatura de servicio
Se recomienda servir a 16 ºC.

Viñedo y elaboración

Descripción
Viñedo ubicado en lo alto de la colina Hermitage, alrededor de una ermita (de ahí su nombre). Desde 1991 cuenta con certificado biodinámico.
Edad
Muchas de ellas son prefiloxéricas y tienen 120 años de edad.
Suelo
Graníticos muy pobres.
Clima
La añada 2020 en el Ródano contó con un ciclo vegetativo similar al de 2003, 2005 y 2015, ya que las temperaturas fueron más altas de lo habitual, provocando un rápido desarrollo de la vid hasta la floración. No se habían visto niveles tan altos de estrés hídrico desde hacía 18 años, pero gracias a la labor de observación y cuidado del suelo se pudo encauzar la situación, mejorando la concentración de niveles de azúcar y acidez.
Cosecha
Vendimia realizada de forma manual.
Vinificación
Despalillado. Fermentación en depósitos de cemento. Esta fermentación dura en torno a 4 semanas, un tiempo en el que la temperatura no supera los 30 ºC. Para elaborar este vino solo se utiliza mosto flor.
Envejecimiento
El 20% de las barricas empleadas son nuevas, otro 20% tienen un solo uso, un 30% tienen dos usos y el resto cuentan con más usos.

Opinión de los críticos

Decanter:

A fresh, piercing cassis style, that’s very fine and compact on the palate. Powerfully mineral, the wine really dives deep. The tannins are juicy but also energetic and strict. A wine with huge intensity and great driving energy. Not as much flesh as some recent vintages, but this is very classically Ermite with its immense tension and peppery, smoky freshness underneath. No lack, or excess, of ripeness. This is bracing. Vines are south-facing, just behind the Chapelle St Christophe.

The Wine Advocate:

Unlike in some vintages, there's no stem inclusion in the 2021 Ermitage l'Ermite. It's still plenty complex, with hints of crushed stone joining boysenberries and blueberries on the nose. Medium to full-bodied, this is intense, crunchy-textured, bright and taut in the mouth, then silky on the finish.

Jeb Dunnuck:

While all the Hermitage releases here are beautiful wines, if I had to pick one. it would be the 2021 Ermitage L'Ermite, which comes from a later, cooler terroir of decomposed granite (and even a touch of limestone). As with the other releases here, it was destemmed, and this cuvée will see 18 months in 25% new French oak. Violets, crushed stone, liquid smoke, leather, and assorted darker, almost blue fruits emerge on the nose, and it's medium to full-bodied and has a laser-like focus on the palate, with fine yet building tannins. There's a certain old school-like vibrancy and structure here, and it's going to warrant 3-5 years of bottle before showing some accessibility. The alcohol levels for all three of the single vineyard Hermitage are between 13.5% and 13.8%. I would expect all of these to have 20-25 years of prime drinking.
