Descripción

La colección Signo surge desde la idea de identidad. En el año 2000 y después de llegar a tener una cantidad lo suficientemente representativa de viñas con Bobal, Víctor de la Serna decidió elaborar un vino que reflejase el potencial de esta variedad en suelos de Manchuela. En su coupage y como curiosidad, incluye un pequeño porcentaje de la desconocida Moravia agria, casta autóctona y sumamente escasa que se cultiva en Albacete y Cuenca.

Rojo picota con ribete violáceo.
Nariz
Golosa, con la fruta negra muy madura y la madera perfectamente integrada (lácteos y vainillas).

Boca potente pero controlada, con cuerpo y volumen, muy buena acidez y persistencia, largo.

Óptimo hasta 2020 aproximadamente si se conserva en buenas condiciones.

Viñedo y elaboración

Descripción
Las viñas se encuentran entre los 700 y 1.050 metros.
Edad
En torno a 20 años.
Suelo
Pobres, arcillo-calcáreos con componente calizo.
Clima
Clima cálido con muy pocas precipitaciones. Amplitud térmica entre el día y la noche.
Cosecha
Se realiza manualmente en cajas de 12 a 15 kilos.
Vinificación
Los vinos se elaboran de forma tradicional, siguiendo muchas de las pautas del Ródano francés, particularmente por la fermentación en depósitos pequeños (la mayoría de 5.000 litros), abiertos y con bazuqueo manual frecuente. La fermentación maloláctica se efectúa enteramente en barrica.
Envejecimiento
Crianza durante 11 meses en barrica.
Embotellado
Se embotella sin filtrar y sin clarificar previamente.

The Wine Advocate:

2012 seems like a balanced vintage in the region. It took heat better than the central and northern vineyards in Spain (as seen in 2006 and 2012). The 2012 Signo Bobal follows the house philosophy not to do varietal wines, so it contains some 11% Syrah. The Bobal is sourced from old vineyards (like all of the variety there) while the estate Syrah was planted in 1998. It was fermented with indigenous yeasts and matured in used 300-liter oak barrels. The nose shows the rustic character of the grape with black fruit, licorice, hints of tree bark and a floral, violet-like background coming through as rustically elegant. The palate shows the Bobal tannins that would benefit from some time in bottle, even though these old vineyards provide much more balanced tannins than do the young vines. It has supple flavors and a juicy texture with a very tasty finish. This is a great example of Bobal, somehow different from the wines from Ponce. 8,040 bottles.

Aromatic cherries and hints of cream. Tar, too. Full-bodied on the palate with concentrated and soft and silky tannins. Fresh finish. Drink now.
