Descripción

Dos Palmas refleja la elegancia y contundencia de los finos de Tío Pepe. Es un fino con una larga crianza, con una media de ocho años de contacto con la flor, que áun perduraba tenue en su superficie en el momento de la selección. Procede de dos botas muy concretas de la bodega, la número 41 y la 75, catalogadas como Dos Palmas por el enólogo de González Byass, Antonio Flores, y el Master of Wine Pedro Ballesteros.

Vista
Tiene un color oro brillante con reflejos verdes.
Nariz
Nariz intensa, muy incisiva y penetrante. Como resultado de su vejez, se pueden apreciar incipientes aromas oxidativos.
Boca
Es potente, con un ligero toque untuoso. Salado y ligeramente amargo. Se podría decir que es un Fino Viejo.
Temperatura de servicio
Entre 8 y 10ºC.
Consumo
Servir bien frío en copa alta de cristal fino.
Maridaje
Armoniza a la perfección verduras en tempura, cremas frías o clásicos aliños y encurtidos.

Viñedo y elaboración

Clima
La climatología del verano fue fundamental para conseguir un delicado equilibrio en estos vinos. El resultado fue inmejorable y se refleja en una selección de finos delicados, elegantes complejos y trascendentes.
Envejecimiento
Crianza de 8 años siguiendo el sistema tradicional de criaderas y soleras.

The Wine Advocate:

I found a lot of character in the nose of the 2018 bottling of the NV Fino Dos Palmas with notes of iodine, low tide, seaweed and rusty nails. The palate is concentrated and full, with pungent, clean and precise flavors and the drying sensation of a long aging under flor. I would have said the wine could have been older than the eight years under flor that they stated. 1,335 half-liter bottles were filled in October 2018.

Decanter:

Fino is all the better with age, as the veil of flor dies out and the oxygen begins to add complexing notes. Dos Palmas, the big brother to Tío Pepe at 8 years old, shows the individuality of the cellar with great refinement and memorable intensity.

Peñín:

Color: dorado.
Aroma: frutos secos, yodado, levaduras de flor, notas amieladas.
Boca: lleno, fino amargor, redondo, matices de solera.

Sit back and enjoy the fino show! Enveloping bouquet with a whole spectrum of dried fruit. Concentrated, but very dry with noble austerity and dramatic freshness. Drink now. An average of eight years aging on the lees.
