Descripción

Este amontillado procede de las soleras más antiguas de la familia Alvear. Un generoso elaborado a partir de uva Pedro Ximénez, que ha pasado una etapa prolongada de envejecimiento bajo velo de flor y posteriormente sin él, en crianza oxidativa. Aromas de nueces y avellanas que combinarán a la perfección con quesos curados.

Maridaje
Perfecto para disfrutar con aperitivos salados, quesos muy curados, consomés, ahumados, risotto de hongos y pescados azules.

The NV Solera Fundacion Amontillado produced from Pedro Ximenez grapes, as all wines from Montilla-Moriles, is their oldest Amontillado, and as the name reveals, comes from a very old solera, from the time the firm was created. Sometimes these old wines can be reduced if they have been in bottle for a while, as it was the case with the one I tasted, but they just need plenty of air, a few hours, even decant them from one day to the next. Had I not known this exceptional wine and if I hadn’t had the luxury of time to decant it and taste it the next day, the assessment would have been very different. It’s one of the problems with these old wines, you just don’t know when they were bottled. Bright amber color with green edges, it has an intense nose with notes of varnish, antique shop, old furniture, incense, hazelnuts, caramel and dried apricots. The palate reveals a powerful, complex and precise wine, a little heady (it’s 20% alcohol), dry, sharp, long and austere. A great old Amontillado. Only 1,000 half-liter bottles are drawn from the solera each year. Drink 2013-2020.
