Descripción

Perteneciente a la colección de "selecciones parcelarias" de M. Chapoutier, los vinos de Ermitage poseen un rico pasado histórico. Personajes como Alejandro Dumas o el zar Nicolás II se encontraban entre sus asiduos. La parcela Le Pavillon se vinifica desde 1989 y cuenta con una producción de unas 7.000 botellas anuales, lo que nos da una idea de lo pequeña y escasa que puede llegar a ser. En su historia ha sido 10 veces calificado con 100 puntos Parker y entre la añada 2009 y la 2012 este vino recibió 100 Parker de forma consecutiva. Esta añada 2020 destaca por una intensa paleta aromática, donde se encuentran notas minerales y especiadas, y una increíble estructura tánica.

Vista
Color rojo granate profundo con destellos púrpura.
Nariz
Aroma de grafito, alquitrán y humo con notas de frambuesa, mora, nuez y regaliz.
Boca
Complejo y con un potente ataque. Después se muestra equilibrado con un final largo y notas de regaliz, tabaco y cacao.
Temperatura de servicio
Se recomienda servir a 16 ºC.
Consumo
Se estima que su vida óptima durará entre 30 y 60 años tras su embotellado guardado en condiciones de bodega.

Clima
La añada 2020 en el Ródano contó con un ciclo vegetativo similar al de 2003, 2005 y 2015, ya que las temperaturas fueron más altas de lo habitual, provocando un rápido desarrollo de la vid hasta la floración. No se habían visto niveles tan altos de estrés hídrico desde hacía 18 años, pero gracias a la labor de observación y cuidado del suelo se pudo encauzar la situación, mejorando la concentración de niveles de azúcar y acidez. Una cosecha que seguro va a ofrecer muchos éxitos en el futuro gracias a su potencial de guarda.
Cosecha
Las uvas se recogen a mano en el límite de su sobremaduración. Debido a su edad, dan muy bajos rendimientos.
Vinificación
Completamente despalilladas, se realizan de una a dos pisadas diarias para asegurar una buena extracción. Las uvas fermentan en tanques de hormigón a una temperatura que no excede los 32 ºC. La maceración dura entre 4 y 5 semanas. Solamente se usa el mosto flor.
Envejecimiento
Se estima que el vino se criará entre 18 y 20 meses en barricas de roble francés (con un 30% de roble nuevo).
Embotellado
Se clarificará naturalmente antes del embotellado.

Opinión de los críticos

The Wine Advocate:

Crushed stone, mint, blackberries and cassis all appear upon the nose of the 2020 Ermitage le Pavillon. The great vintages of these wines soak up the oak, like this one has. Full-bodied, concentrated and massive in scale, it's a mouthful of dark fruit flavors that gradually morph into something more savory on the long, silky-firm finish, adding notes of black olives and espresso. It's really impressive, as it maintains a sense of elegance all along its path.

The 2020 Ermitage Le Pavillon is pure gold, and Hermitage doesn't get any better. Incredible aromatics of cassis, graphite, burning embers, and crushed stone all emerge from this beauty. Stunningly proportioned and incredibly pure, it's full-bodied, concentrated, and powerful, but as with all great vintages of this cuvée, it's going to demand bottle age. While Les Greffieux and Le Méal bring much more opulence, this is the powerhouse, long-distance candidate in the lineup. It's an incredible effort. Give bottles upwards of a decade in the cellar, and it should evolve effortlessly over the following 30-40 years.

Decanter:

Has that tell-tale touch of soy to the plum and blackcurrant fruit so reminiscent of this cuvée. Very fluid and juicy on the palate, this has great intensity and salinity without feeling heavy or overripe. Plenty of sweet, ripe tannins and balanced acidity. Only medium-bodied, there's a touch of pepperiness on the finish. Great freshness and balance. Perfect balance and so harmonious. Sometimes a wine seems a bit too easy, a bit too effortless, and it can lull you into a sense that it lacks seriousness. This wine tries to do that. But I'm not inclined to underestimate it. Drinking Window 2030 - 2052

Patience, please, but in return for that you will be given the keys to Hermitage heaven. This is extremely concentrated, but also extremely refined. Incredible finesse for this level of power with extraordinary density of ripe black fruits. Somehow this manages to smell and taste unbelievably fresh. And that freshness just doesn’t want to stop at the finish. From biodynamically grown grapes with Demeter certification. Drinkable now, but best from 2026.
