Descripción
Dom Pérignon Rosé es todo un homenaje a la Pinot noir, la uva que predomina en la composición de este champagne único, que también se elabora con un porcentaje menor de Chardonnay. Destaca la mineralidad yodada obtenida gracias a una larga maduración (10 años), ese característico lado «oscuro» de Dom Pérignon que resulta tan complejo e intrigante. La añada 2005 estuvo marcada por los contrastes climatológicos, dando lugar a una producción menor de lo habitual pero de calidad excepcional, con una madurez aromática inédita.

"The 2005 Dom Pérignon has a brilliant white-golden color and is intense on the yeasty nose, where vegetal aromas along with almond and rather discreet fruit flavors are displayed, before they intensify and become more rich. Firm, fresh and elegant, this is a full-bodied, complex and pretty rich, well concentrated and creamy-textured DP with a tightly woven structure; it has a still somewhat edgy finish. There is bit more Pinot Noir than usual in this blend, whereas the produced quantity is relatively low. Due to strict selections, just the half of the normal quantity was produced."
A mind-blowing wine. This is super subtle and intense with aromas of peaches, light strawberry and cream. Also shows rose petal and cooked peaches. Medium to full body, with ultra-fine tannins that feel like fine silk. The finish goes on for mintutes. It floats across the palate. The winemaker says the closet vintage to this is the 1990, but I think this is better.
