Descripción

En el excelente coupage de este vino, la Semillon ayuda a llenar el paladar, agregando peso de fruta, riqueza y capacidad de envejecimiento, delimitando la exuberancia de la Sauvignon blanc. El resultado es un blanco fragante, de refrescante mineralidad, con notas elegantes de mermelada de limón y flor de naranjo.

Cosecha
Cada variedad se vendimia en su momento óptimo. La Sauvignon durante el mes de abril para optimizar aún más las variedad y potenciar los sabores. La Semillon a finales de mayo.
Vinificación
Estas variedades fermentaron por separado con levaduras naturales. La mayor parte del Sauvignon en acero inoxidable para conservar el carácter de la fruta, y todo el Semillon en roble para agregar textura. Una pequeña parte del Sauvignon también maduró en barricas francesas para sumar longitud y complejidad.
Envejecimiento
Ambas variedades fueron envejecidas en depósitos naturales durante 10 meses, antes de la mezcla. Antes de su lanzamiento, se deja 12 meses mas en botella.

The Wine Advocate:

Less pungent and funky than the 2015, the 2016 Sauvignon Semillon shows hints of struck flint and pencil shavings on the nose, then pear, fig and melon flavors. It's medium-bodied and silky in texture, with a clean, lingering finish.
Owners Ivan Donaldson and his wife Christine have largely passed management of this historic winery to the next generation. Four sons are involved in the family business: Matt is the winemaker, Ed handles marketing, Paul is the general manager and Mike does domestic sales. The Donaldsons first planted grapes on the Canterbury Plains in 1975 but purchased the current property in Waipara in 1985. The winery was built in 1991 (the first vintage). The wines remain reference points for the region, even if the styles have in some cases evolved over time. The Chardonnays, in particular, are now picked earlier and see less oak and malolactic fermentation.

Attractive lemon peel and gooseberries with light green-papaya notes and a savory, nutty edge. The palate has a juicy, refined and very linear feel. The straightest of the Pegasus Bay whites. This will age well. Drink or hold. Screw cap.
