VAUX Rheingauer Réserve Riesling Brut 2016

With six years on the lees, this is the longest aged Sekt in this line-up. The nose is creamy and has salty, peppery overtones alongside vivid notes of fresh rye sourdough. The palate clearly shows some evolution, coming in with intriguing notes of salty liquorice and ripe yellow apple. The fine mousse pays testament to the long ageing while vibrant lemon makes for mouth-watering acidity. Beautifully complex and very long. This is just cut out to go with briny rock oysters. Delicious.
