Juan Francisco Fariña ha creado este vino con Listán blanco, una variedad reina en Canarias, y de botas viejas de Jerez para su crianza, donde permaneció durante 11 meses. Así, el vino muestra ciertas notas características de generoso aún no habiendo tenido crianza con velo de flor.

The Wine Advocate:

The biologically aged white 2018 Los Loros La Bota de Mateo comes from a very old vineyard at 1,400 meters in altitude that matured in a used sherry cask that had been used for the 2017, and the lees were not removed to keep the flor. It developed a thin layer of flor yeasts during the 11 months that it was left untouched in the cask and then was bottled unfined, unfiltered and without any added sulfur. It has an amber color and a clearly sherried nose with nutty and spicy undertones and a streamlined palate with pungent flavors and marked minerality, showing not only the process but more of the soil. This would drive people crazy in a blind tasting. I love it! 620 bottles were filled in October 2019.
