The citrus colored NV Blanc de Blancs Brut Nature assembles stainless steel-fermented Chardonnay wines from three harvests, in this case 2010, 2009 and 2008. Disgorged in October 2016, this is an intense yet pure, fresh and vital Brut Nature with a creamy texture characterized by its brioche flavors but also a tight and linear structure that leads to a fresh, clean and pretty persistent finish. White ripe fruits, white flowers, chalk and brioche aromas are displayed on the nose. This is a very elegant, fresh and fine Blanc de Blancs from the chalky slopes of Montgenost and Villenauxe-la-Grande. It should be delicious with oysters, shell fish and certainly sashimi.
