Descripción

Fino elaborado a partir de uva ecológica de Palomino procedente del pago de Burujena. Se trata además de un fino de añada, procedente de la vendimia de 2015 y embotellado en rama. A diferencia de los vinos de jerez tradicionales, el sistema de envejecimiento de esta referencia no es el de "Solera y Criaderas", sino que se trata de un vino de crianza estática. Cada vino de añada es diferente, único y especial. En este caso se trata de un fino muy fresco, floral con estructura y mineralidad.

Cata

Vista
De color amarillo pálido.
Nariz
Aromas frescos y punzantes. Predominan las notas florales y los recuerdos de almendras.
Boca
Seco, muy mineral, elegante y con una estructura muy equilibrada.
Temperatura de servicio
Se recomienda servir entre 7 y 10 ºC.
Maridaje
Ideal con jamón ibéricos, con olivas verdes y con marisco crudo o a la brasa.

Uva Palomino ecológica procedente del Pago de Burujena, en Trebujena.
Suelo
Albarizas.
Clima
Mediterráneo con influencia atlántica.
Vinificación
Tras la fermentación de estos mostos a 22 ºC, se fortificó a 15.5 con alcohol ecológico. Con el tiempo y de manera espontánea, debido a la presencia de levaduras de flor en el ambiente, se fue desarrollando de forma natural el velo de flor.
Envejecimiento
Este Fino Ecológico de la Añada 2015 es el resultado de la crianza estática durante 3 años en bota de roble americano de 600 litros de capacidad.

Pertenece a la saca realizada en octubre de 2021.

There is a new 2015 Vintage Collection Organic Fino (the labels for Spain say Colección Añadas like the other wines) sourced from the Burujena in Trebujena that are organically farmed and planted with small-grain Palomino that give very low yields. They first produced this in 2015, fermented with indigenous yeasts and also fortified with organic alcohol, and it was produced in 2016 and 2017 too. They saw an evolution of the wine, and a very floral personality, possibly the combination of the place and the way it's cultivated and then fermented with the wild yeasts. It's very fine, which is surprising for the reputation of Trebujena because they think the wines from Trebujena do not necessarily need to be structured. This was the first vineyard to be picked, and they were very surprised by the result; they found that the wine had flavors, concentration and maturity while keeping the freshness being so young. It has a floral character with touches of diesel and ash, and it has a serious palate. They did a selection of the best barrels and did two bottlings of around 1,000 bottles each. It might seem light and fresh, but it comes back in the finish with good grip. Surprising for its young age.
