The new and very interesting sparkling white NV G1 Brut Nature is the result of a joint project with the University of Córdoba. They wanted to provoke the second fermentation in bottle with the flor yeasts, the G1 yeast identified and isolated in the 1980s in their other winery, Bodegas Gracia. It's a blend of Pedro Ximénez from 2020 and 2021 refermented in bottle and aged with lees for 21 months. It has a bright yellow color with some green tints and a characterful, yeasty nose with notes of esparto grass and smoke, a velvety palate with very fine bubbles and a dry finish with tasty flavors and a bitter twist. I liked it very much. Like many of the beginners in the sparkling wine segment, there's no mention of the vintage blend, disgorgement date or anything to be able to identify this wine other than a lot number, L-3/G1. 10,344 bottles produced. It was disgorged in November 2023. For now, this has no appellation of origin.
