Monovariëteit van Albillo, een druif die alleen hier groeit. Het is een witte druif die je vaak vindt in de uitlopers van de Sierra de Gredos. Hij is super lekker als hij precies goed rijp is, wat de wijn een zoete smaak en structuur geeft. Er wordt maar een beetje van gemaakt

Drie percelen in Albillo, tussen 715 en 740 meter boven zeeniveau en omgeven door mediterrane bossen.

Onze grond is vrij ondiep, met donker, compact graniet dat veel kwarts heeft.
Wijnmaken
Pre-gisting gedurende 36 uur in een koelwagen. Maceratie met de schillen gedurende 36 uur. Gisting bij lage temperatuur. De gistresten blijven tijdens het hele rijpingsproces op de wijn liggen, zonder 'batonage'. Een van de drie percelen gist als een rode wijn, met schillen en steeltjes gedurende 60 dagen.
Veroudering
12 maanden gerijpt in Franse eikenhouten vaten.

The oldest white in the current portfolio is the complex, nuanced and subtle 2021 Cantocuerdas Albillo de Bernabeleva. It was produced with Albillo Real from old vines in different parts of the estate and released after some time in bottle, as they believe the variety has potential to age in bottle. It fermented partly in used barrels, partly with full clusters and matured in three 500-liter barrels. It's subtle and complex, with notes of white flowers and fruit and a light palate that is sharper than usual, with contained ripeness and alcohol (13%) and integrated acidity. It ends with a dry, chalky finish. 1,800 bottles were filled in September 2022.

Complex and layered, this Albillo Real comes from one vineyard made up of three small parcels. While the nose is expressive with delicate honey notes and mountain herbs, this wine is really all about texture and structure. It was barrel fermented and aged in large foudres, as well as some amphora, and offers notes of iron and clay. It finishes with white pepper and a bitter grapefruit pith lift, and is long and very morish! 2024 - 2029
