Grapes from the second vintage of the 2016 Sínodo Los Tollos achieved better balance after two years of working the vines. The hand-harvested and hand-destemmed grapes fermented with indigenous yeasts, and the wine matured in two barriques and one plastic tank for 11 months. The wine felt a bit young, with some creamy oak, as if the wood had been newer than in 2015. It seemed to have more concentration and ripeness too, as if it had a more powerful character without the elegance of the 2015. But let's see what happens with one more year in bottle. 894 bottles were filled in August 2017.
