Segundo Devaux, com este champagne brut conseguiu-se "a derradeira expressão" de um espumante de categoria. É elaborado com uma boa dose de vinhos de reserva e uma criação em rima de 5 anos. Possui uma expressão muito aromática, com notas de flores, torrados e pastelaria e uma passagem de boca tão cremosa como fresca.

Some light oak influence here, adding depth and complexity. This has aromas of lime zest, lemon and yellow grapefruit with wild red cherries and nicely placed biscuit-like savory aromas - young but inherently complex. The palate's full of flavor and builds well with flavors of dried lemon pith, grapefruit and white cherry; acidity is a feature and the finish holds deep and flavorsome. In a good place now.
Notes of both Golden Delicious and Granny Smith apples fill the nose with their respective ripeness and freshness. The palate is slender, almost delicate, and vivid with the fresher rather than the riper apple notes. The mousse is fine and lively, supporting and underlining the fruit-driven yet-elegant style of this wine. The wood influence is beyond subtle and beautifully handled. Robe jaune pâle. Nez fruité intense, plutôt sur les petits fruits rouges. En bouche une belle attaque très veloutée, beaucoup d'ampleur à l'évolution dans une ambiance fraîche et soyeuse. Un champagne d'une grande pureté pour un apéritif festif.
This is the nonvintage cuvée from this cooperative based in the Aube region. It is rich, with ripe white fruits and plenty of textured acidity. A core of tightness keeps the Champagne in good shape. Drink now. Roger Voss
