Wijngaard en wijnmaken

Descripción
Het ligt vlakbij het kleine middeleeuwse dorpje Riparbella, op de westelijke helling van een heuvel aan zee, omgeven door mediterrane vegetatie die de wijngaard op natuurlijke wijze beschermt. Het wordt verbouwd volgens de regels van de biodynamische landbouw.
Bodem
Grond van grind en klei, waar de wijnmakerij zijn naam aan heeft.
Oogst
De handmatige oogst begon op 5 augustus met de Merlot en eindigde op 21 september met de Petit Verdot.
Wijnmaken
De verschillende percelen en druivensoorten werden apart gemaakt in betonnen en houten tanks, met een langzame, natuurlijke gisting en zachte extractie.
Veroudering
Na de malolactische gisting zijn de geselecteerde wijnen op vaten gedaan en daarna 14 maanden gerijpt in vaten waarvan 30% nieuw eikenhout was. Na de rijping rust de wijn twee maanden in betonnen tanks voordat hij wordt gebotteld en nog een jaar op fles.
