Descrizione

L'uva con cui si fa questo vino viene da un vecchio vigneto a Cebreros, proprio nella Sierra de Gredos. Lì le condizioni di coltivazione sono davvero estreme, con pendii vertiginosi dove le radici delle viti si estendono su un terreno argilloso. Il risultato si chiama Kaos, un vino di cui sono state prodotte solo 1.585 bottiglie in questa annata 2015

Degustazione

Vista
Ben coperto, di tonalità medio-alta. Il suo colore rosso brillante ricorda quello delle ciliegie mature.
Profumo
Al naso è complesso ed elegante, con un bouquet che fa risaltare i profumi primari di frutta fresca, buccia d'arancia ed erbe aromatiche, ben accompagnati da una mineralità che si esprime in note di grafite e polvere da sparo, insieme ad aromi di cacao e sentori tostati tipici dell'invecchiamento in legno.
Bocca
In bocca è piacevole, facile da bere ma intenso ed equilibrato, con tannini maturi, fini, delicati e gustosi che prolungano il piacere e il carattere fruttato. Persistente ed elegante.
Temperatura di servizio
Si consiglia di servire a 16 °C.
Abbinamento
Carni rosse, arrosti, selvaggina, maialino da latte, coda di toro o con salse complesse.

Macerazione prefermentativa a freddo per 15 giorni con l'uva intera. Pigiatura delicata senza l'uso di pompe.

This Garnacha from the Valle del Alberche is from old vines, nearly 80 years old, grown on slate soils. The resulting wine displays a seriously stoney, flinty personality while the aromas offer pine freshness intertwined with red cherry. It has fabulous structure with enough grip and grunt to point to a long future. A pure and frank Gredos Garnacha. 2024 - 2030

The Wine Advocate:

The 2015 Kaos is the Garnacha from the village of Cebreros in Ávila, and this same wine I tasted for my previous article on the Gredos zone. Produced with grapes from the Arrebatacapas zone of Cebreros, it fermented with full clusters and matured in 500- and 600-liter oak barriques for 18 months. They feel this wine, from slate soils, needs at least five years in bottle, because it's very edgy and powerful when young. They haven't bottled any vintages after this 2015, but they might do it again in the future. They feel this is starting to be drinkable now. It has a darker profile, both because of the soils and also the character of the year. Time in bottle has polished its tannins, but they are still abundant and give it a powdery texture and mouthfeel. 1,350 bottles were filled in February 2017.
