El Serbal Paraje La Santa 2023
Description

The 2023 El Serbal Paraje La Santa, now sold without any appellation of origin, is a blend of 60% Tempranillo, 20% Garnacha, 10% Viura and the rest Albillo and others from old head-pruned vines on a northeast-facing slope at 990 meters above sea level surrounded by trees, among them rowan trees (serbal). It comes in at 13.5% alcohol. It has a bright ruby color with a balsamic nose with herbal notes, notions of pine needles (perhaps rowan tree leaves, but I've never smelled one...) and some acid berries, pungent and with an ashy quality. It has a medium- to full-bodied palate with a lace texture, fine-grained tannins, some concentration, structure and intensity, but it is fine-boned, tasty and clean, with a long finish. It was produced in a simple way, fermenting the uncrushed grapes with indigenous yeasts, part of them trodden by foot and matured in 600-liter barrels. It has character and a little rusticity.
