There is a new NV Don Zoilo Fino en Rama, an unfiltered old Fino bottled with an average age of 10 years. It has an amber color and pungent nose and palate, with intense aromas and flavors of esparto grass, nuts and a salty touch getting closer to the profile of a Fino Amontillado. I love the essence of esparto grass and the Mediterranean flavors. Delicious.
