The 2018 225 Brut Nature surprised me with its balsamic nose. 2018 was a very rainy year with a late harvest, and the wines have very good balance between acidity and alcohol. This blend of 53% Xarel.lo, 27% Macabeo and 20% Parellada fermented and matured for three months in 225-liter barrels before it was put to referment in bottle, where it was kept with lees for 45 months. It has subtle smoky notes and hints of flowers and herbs. It has abundant, very fine bubbles and a dry, chalky sensation and a very tasty, almost salty finish. 17,000 bottles and 800 magnums were produced. - Luis Gutiérrez.
