The intense-pink sparkling 2022 Kimera Espumoso Ancestral Rosado was produced with Garnacha grapes, 80% red and 20% white. It fermented in stainless steel at low temperature and was put in bottle when there was around 20 grams of sugar in the wine to finish fermenting in the bottle, where it was kept with lees for 11 months. It has notes of strawberry and raspberry and a fruit-driven palate with abundant, small bubbles. It's tasty, clean and finishes with a fruit-driven note. It has 12.5% alcohol, a pH of 3.22 and 5.55 grams of acidity. It was disgorged in September 2023. 1,000 bottles produced.
