Produit selon les pratiques de l'agriculture biologique, Acaibo parvient à combiner l'intensité californienne et l'élégance bordelaise, avec des notes expressives de fruits concentrés et une touche toastée et fumée issue de l'élevage en fûts de chêne français. This shows subtle blue fruit such as raspberries and blueberries with basalt, pumice and pine needles. Medium to full body with very fine tannins and a fresh finish. Crisp and bright. From organically grown grapes. Will be beautiful around 2025.
Coming from a tiny appellation in Sonoma County, the 2018 Cabernet Sauvignon Acaibo Trinite Estate checks in as 85% Cabernet Sauvignon, 11% Merlot, and the rest Cabernet Sauvignon. It has a saturated purple hue to go with ripe, intense notes of purple fruits, minty herbs, violets, and black cherry-like aromas and flavors. Benefiting from air (don't be afraid to decant this), it's medium-bodied, has a fresh, focused mouthfeel, ripe yet certainly present tannins, and outstanding length. It has the acidity, as well as the structure, to benefit from 3-4 years of bottle age and will shine over the following 10-15 years.
Layered, complex and spicy, this wine offers earthy, herbal, leathery and meaty accents over deep, dark blueberries and blackcurrants. Intense fruit concentration on the palate trails off to a light smoky touch on the aftertaste.
