Cativante, maduro e profundo. Combinação de aromas a especiarias, cacau e fruta (figo, alperce assado, laranja confitada), com notas fumadas.

Ampla, intensa, suculenta, suave e crocante. A sensação sedosa funde-se numa estrutura suave, firme e granulada, com um toque ligeiramente vegetal. O sabor a vinho torna-se iodado, salino.

Vinho elaborado com um 'assamblage' baseado principalmente na casta Pinot noir. Passam mais de 10 anos desde que a uva entra na adega até que o vinho sai do mesmo lugar.

The 2008 Dom Pérignon Rosé continues to drink brilliantly, exhibiting aromas of orange, red berries, pear, pastry, spices and some smoke with time in the glass. Full-bodied, charming, broad and fleshy, with pristine balance, it’s a seamless, complete and vinous Champagne of compelling purity and maturity.

This shows incredible depth of fruit with strawberry, cherry and phenolics. Full-bodied and layered with an incredible, three-dimensional element to the wine. This is so transparent and dynamic with dark fruit, yet it remains vivid and bright. Refined and precise, it goes on and on. Really savory, fresh and incredibly pinot-noir-like. What a wine. 13 years of maturation in the bottle. So drinkable now, but it will age for many years ahead.

The 2008 Champagne Rosé is another elegant expression, offering notes of cardamom, strawberry, and dried flowers. The palate is dry and well-structured and is balanced and long on the finish, with notes of dried orange peel, redcurrant, and fantastic salinity. It has a great application at the table and should continue to improve over the next 15-20 years.

Falstaff:

Medium salmon pink, delicate pinkish glints, silver touch, persistent, creamy mousse. A crisp biscuity tone underpins red fruit nuances such as sweetheart cherries, pineberries, white flowers, orange zest, and a sprig of fresh mint. On the palate, vibrant freshness is embraced with dark forest berries, but also cranberries mingled with herbs such as thyme and rosemary, as well as a slight honey nuanced core. The wine offers an ethereal quality, accentuated by soft toasted aromas on the finish, resulting in great length, and mineral reverberations. An accessible, multifaceted food companion with ageing potential.
