Volaina 2022

The 2022 Volaina is part of a project where they study butterflies as indicators of diversity. The idea here is a wine with low alcohol, more fragile, produced with Parellada from Pla de Manlleu, a very different part of Penedès, at higher altitude and a lot cooler. The grape ripens at low alcohol (this has 9.5%), and the wine is delicate and fresh, tasty (the grape has developed aromas and flavors) and with a salty twist. They give a little more structure with some skins at the end of the fermentation. It's light but it can age. 9,000 bottles produced. It was bottled in May 2023.
