Macération préfermentaire pendant 36 heures dans un camion frigorifique. Fermentations avec 100 % des rafles à basse température, avec une macération pouvant aller jusqu'à 70 jours. Foulage au pied et mouvements doux pour éviter les extractions excessives. Levures et bactéries propres au raisin et faibles niveaux de soufre.
Elevage
Rouge crianza de 14 mois en fûts de chêne français de différents volumes et tonneliers, puis 6 mois en cuve inox pour une stabilisation naturelle avant mise en bouteille.

Usually my favorite here, the 2022 Garnacha de Viña Bonita was produced with grapes from the vineyard that produces their most elegant wine, a plot on white granite soils whose grapes fermented with 80% full clusters and a long maceration of six weeks. The élevage was in three used 600-liter barrels. It has a pale and bright ruby color and a complex and intriguing nose with notes of meat broth and decayed violets plus the usual aromatic herbs and spice. The palate has the most elegant tannins of the 2022s, fine-grained and with a chalky and dry sensation in the finish. It has 14.5% alcohol, a pH of 3.4 and 5.07 grams of acidity. It is delicious and elegant. 2,200 bottles represents the largest production ever from this vineyard. It was bottled in May 2024.

Gredos, granite and Garnacha. Viña Bonita is a parcel of 80 year old vines grown at 700m which captures the purity of the region, its soils and the variety. The surrounding forest brings a herbal note and a touch of wet earth which combines with red cherry fruit and cola. It is a voluptuous red which maintains its tension through stony energy and fresh acidity. There’s an ethereal quality to this wine which is elegant and poised but is still a little wild at heart. 2024 - 2032
