Questo rosso è uno dei vini che ha dato più soddisfazioni alla cantina Chapoutier. Fatto con Syrah, il classico vitigno dell'AOC Ermitage, è un vino eccezionale che ha ricevuto cinque volte i famosi 100 punti Parker.

Profumo
Aromi di frutta nera, note affumicate e spezie.
Bocca
Avvolgente e profondo, con tannini fini e levigati. Nel finale si sentono note di pepe tostato e frutti neri.

Vigna e preparazione

Descrizione
Vigneto situati in cima alla collina Hermitage, intorno a un eremo (da cui il nome). Dal 1991 hanno la certificazione biodinamica.
Età
Molte di queste sono prefilosseriche e hanno 120 anni.
Suolo
Granitici molto poveri.
Clima
L'annata 2020 nella regione del Rodano ha avuto un ciclo vegetativo simile a quello del 2003, 2005 e 2015, con temperature più alte del solito che hanno fatto crescere la vite velocemente fino alla fioritura. Non si vedevano livelli di stress idrico così alti da 18 anni, ma grazie al lavoro di osservazione e cura del terreno è stato possibile tenere sotto controllo la situazione, migliorando la concentrazione dei livelli di zucchero e acidità.
Raccolto
Vendemmia fatta a mano.
Vinificazione
Diraspato. Fermentazione in vasche di cemento. Questa fermentazione dura circa 4 settimane, durante le quali la temperatura non supera i 30 °C. Per fare questo vino si usa solo il mosto fiore.
Invecchiamento
Il 20% delle botti usate sono nuove, un altro 20% sono usate una sola volta, il 30% sono usate due volte e il resto sono usate più volte.

Decanter:

A fresh, piercing cassis style, that’s very fine and compact on the palate. Powerfully mineral, the wine really dives deep. The tannins are juicy but also energetic and strict. A wine with huge intensity and great driving energy. Not as much flesh as some recent vintages, but this is very classically Ermite with its immense tension and peppery, smoky freshness underneath. No lack, or excess, of ripeness. This is bracing. Vines are south-facing, just behind the Chapelle St Christophe.

While all the Hermitage releases here are beautiful wines, if I had to pick one. it would be the 2021 Ermitage L'Ermite, which comes from a later, cooler terroir of decomposed granite (and even a touch of limestone). As with the other releases here, it was destemmed, and this cuvée will see 18 months in 25% new French oak. Violets, crushed stone, liquid smoke, leather, and assorted darker, almost blue fruits emerge on the nose, and it's medium to full-bodied and has a laser-like focus on the palate, with fine yet building tannins. There's a certain old school-like vibrancy and structure here, and it's going to warrant 3-5 years of bottle before showing some accessibility. The alcohol levels for all three of the single vineyard Hermitage are between 13.5% and 13.8%. I would expect all of these to have 20-25 years of prime drinking.
