Vinificazione
Dopo aver pressato l'uva intera, si fa una pre-macerazione fermentativa a freddo per 24-48 ore. Circa il 50% del mosto passa in barrique nuove di rovere francese da 600 litri. L'altra metà resta nei serbatoi.
Invecchiamento
Affinamento sui lieviti per 12 mesi.

From the warmer, south-facing Le Méal lieu-dit and always the first to be harvested, the 2021 Ermitage Le Méal Blanc is another pure, elegant, incredibly impressive white offering notes of honeyed stone fruits, roasted hazelnuts, brioche, and crushed rock. Medium to full-bodied, concentrated, and opulent, it's more expressive and expansive than the more chiseled, elegant De L'Orée, but the quality is basically the same. It too needs 3-4 years of bottle age.

Kicking off with notes of toasted grain and honeyed citrus, the 2021 Ermitage le Méal Blanc has lots going on, adding exotic stone fruit and pineapple. It's medium to full-bodied, fleshy and ripe, then turns a bit austere on the dry, chalky finish. While it lacks the overall harmony and elegance of the De l'Oree this vintage, it's still pretty compelling stuff.
