The 2019 Paydos was made with grapes from their El Sol vineyard in Toro, picked on September 18 and fermented with 13% full clusters with indigenous yeasts. It matured (including malolactic) in French oak barrels, 20% of them new, for 15 months. It has 14.5% alcohol and a pH of 3.63. It feels ripe and concentrated, with some earthy rusticity and abundant, slightly dusty tannins. It feels a bit raw. Does it need more time in bottle? 8,000 bottles and 100 magnums produced. It was bottled in March 2021.
