Descripción

El Perro Verde es un proyecto de Ángel Lorenzo Cachazo y de su hijo Javier, cuya familia había estado siempre vinculada al mundo del vino. Es un blanco 100% Verdejo elaborado con uvas procedentes de viñedos ubicados en Pozaldez, Ventona de la Cuesta, La Seca, Rueda y Medina del Campo. Es un vino fresco, ideal para compañar aperitivos, arroces, crustáceos y pescados. Disponible aquí en formato magnum.

Vista
Amarillo verdoso, muy brillante, limpio y transparente.
Nariz
Intenso y fragante, con notas de fruta tropical, piel de cítricos y un recuerdo refrescante de manzana y flores blancas.
Boca
Entrada suave, recorrido untuoso y fresco con notas de fruta de hueso, piña y caramelo de limón.
Temperatura de servicio
Entre 6 y 8ºC.
Consumo
Óptimo desde el momento de la compra.
Maridaje
Ideal para acompañar aperitivos, arroces, crustáceos, pescados de playa, sushi y sashimi.

Viñedo y elaboración

Nombre
Pozaldez, Ventosa de la Cuesta, La Seca, Rueda y Medina del Campo.
Superficie
700 y 800 metros sobre el nivel del mar.
Suelo
Poco compacto, suelto, con bastante piedra y alto porcentaje en caliza.
Clima
El clima de la zona es continental de influencia atlántica. La pluviometría es de 300-500 mm anuales, con una media de 2.544 horas de sol al año, 24,6ºC de temperatura media durante el ciclo vegetativo y oscilaciones térmicas en periodo de maduración que van de los 11ºC durante la noche a los 27ºC durante el día.
Rendimiento
9.000 kilogramos por hectárea.
Cosecha
Tuvo lugar el 20 de septiembre.
Vinificación
Despalillado y estrujado, seguidamente se realizó una maceración a 10ºC durante 12 horas. Fermentación a 18ºC en depósitos de acero inoxidable.
Embotellado
En enero de 2017.

The Wine Advocate:

"Only magnums of the 2016 El Perro Verde had been bottled at the time of my tasting, so that's what I tasted. I also had the chance to taste it next to the previous vintage, 2015, so it was great to be able to see the minute differences in style and the evolution in the wine with one year difference. 2016 was harvested later, because the vegetative cycle had been delayed, starting on September 18th. There is an increase in volumes, which reflects the success of this custom cuvée, but at the same time there is more zip and freshness in the wine, possibly a finer vintage, not as warm and dry as 2015. It's very tasty, with well-defined flavors, focused and with a nice finish. A very good showing of this wine today. 510,000 bottles were produced in 2016."
