Descripción

Dom Pérignon Rosé es todo un homenaje a la Pinot noir, la uva que predomina en la composición de este champagne único, que también se elabora con un porcentaje menor de Chardonnay. Destaca la mineralidad yodada obtenida gracias a una larga maduración (10 años), ese característico lado «oscuro» de Dom Pérignon que resulta tan complejo e intrigante.

Nariz
Especiado y con notas de cacao al principio que se abren rápidamente hacia toques más frutales. Higo y albaricoques asados, naranja confitada y un conjunto que respira acentos ahumados.
Boca
Intenso y suculento, jugando con su faceta suave y crujiente. Sensación sedosa que se funde en una estructura suave, firme y granulada. La vinosidad se torna yodada y salina.
Temperatura de servicio
Entre 8 y 10ºC.
Consumo
Óptimo hasta 2035 aproximadamente si se conserva en buenas condiciones.
Maridaje
Burrata con anchoas.

Viñedo y elaboración

Clima
El clima de la añada 2006 fue globalmente cálido y seco, aunque con contrastes. Aunque el mes de julio fue canicular, agosto fue fresco y húmedo. El carácter casi estival de septiembre fue lo que definió a esta añada, secando los escasos focos de botrytis y ofreciéndole una madurez superior a la media.
Cosecha
Comenzó el 11 de septiembre y duró casi 3 semanas.
Vinificación
Vino elaborado con un 'assamblage' basado principalmente en la Pinot noir. Pasan más de 10 años desde que la uva entró en bodega hasta que el vino salió del mismo lugar.

The Wine Advocate:

The 2006 Dom Pérignon Rosé is showing well, offering up an expressive bouquet of bitter orange, red berries, apple and a delicate hint of dried flowers and herbs. On the palate, the wine is medium to full-bodied, deep and broad, with a fine mousse, ripe acids and chalky phenolic structure, especially on the finish, which testifies to the fully 20% of still red wine that was included in the blend. This is a vinous, gastronomic rosé that numbers among the decided successes of the 2006 vintage.

James Suckling:

Loads of complexity on offer here, from brioche to dried peaches to strawberries and cream and on to rhubarb fool, pomegranate pastries and bread crumbs. The mousse is wonderfully integrated to the edgy peaches and notes that feather the finest line between oxidation and reduction. Very layered and linear, this is an incredibly long and mind-bending Champagne. Drink now.

Pale to mid salmon. A definite orange hue. Broad and rose-scented. Really quite extensive on the palate. Very nicely balanced. Lots of fruit and much softer than the 2008 and 2002 Blanc.

This graceful 2006 shows lovely freshness, featuring a pronounced note of pink grapefruit granita layered with finely detailed accents of toasted nut, lemon thyme, smoky mineral and crystallized honey. Plushly creamy in texture, with a steely streak of acidity well-knit throughout and firming the lasting, spiced finish. Drink now through 2029.
