Unfortunately, the excellent bottling of the NV Carrasviñas Dorado does not carry any information about bottling date or vintage date (they told me it was from 2017), so it's impossible to distinguish it from previous bottlings. It's a blend of 65% Verdejo and 35% Palomino picked at 15% potential alcohol, fermented and put in 16-liter glass demijohns that are kept outside the winery for at least 18 months. It developed a veil of flor yeasts for some months and then was transferred to 225-liter oak barrels where it matured for two years. It has an unusual combination of flor biological aromas and some creaminess from the barrels, sweet spices and a lactic hint. It's pungent, powerful, dry and has marked bitter flavors. They filled 2,000 bottles in October 2021. I'm still hoping that in the future they will put something on the labels to be able to differentiate the different bottlings...
A Rueda Dorado that shows hints of almond to the sour dough, nori and yellow apples. Rich and dry with a sleek mid-palate and lots of yeasty flavors and apples. Drink now.
Complejo y potente. Gran trabajo
