Descripción

Segunda añada de este espumoso elaborado a partir de un vino base de txakoli siguiendo el método tradicional o champenoise. Izar-Leku, que en euskera significa "el lugar de las estrellas", es toda una declaración de intenciones: en el corazón de Guipúzcoa pueden hacerse cosas distintas. Un Brut con una gran demanda en el mercado que agrada por sus notas aromáticas de cítricos y hierbabuena y su paladar mineral, amplio y envolvente.

Nítido, limpio y brillante.
Nariz
Aromas de manzana verde y limón comparten bouquet con las sutiles notas de hierba fresca y apuntes minerales.
Boca
Amplia y jugosa. Muestra volumen en el paladar y una agradable burbuja fina. Regala un final redondo y sutilmente salino.
Temperatura de servicio
Se recomienda servir entre 6 y 8 ºC.
Consumo
Óptimo hasta 2023 aproximadamente si se conserva en buenas condiciones.
Maridaje
Ideal con todo tipo de marisco, especialmente con ostras, langostas o vieiras. También como cremas de pescado y con aperitivos.

Viñedo y elaboración

Descripción
Situados en Zarautz. Viñedos en parral asentados en terrenos de laderas orientadas al sureste.
Suelo
Arcillosos con un sustrato rocoso de pizarra y basalto, protegidos por una arenisca superficial.
Cosecha
Vendimia manual en cajas de 10 kilogramos.
Vinificación
Maceración en frío durante 24-48 horas. Prensado muy suave con uvas enteras. Decantación del mosto y fermentación en tanques de acero inoxidable durante 10-12 días a 16 ºC de temperatura. Conservación durante 6 meses en depósitos de acero inoxidable con sus lías finas. Después se realiza el tiraje para su posterior fermentación en botella.
Envejecimiento
Crianza en rima durante 30 meses. El primer degüelle se realizó en septiembre de 2019, sin licor de expedición.

The Wine Advocate:

The second vintage for this amazing and unusual sparkling Txakoli, the 2016 Izar-Leku was produced by the traditional method of second fermentation in bottle, where the wine spent 18 months, but the base wine was with lees for a year (one-third in barrel) before it was put in bottle. The bottles are kept at low temperature, 13 degrees Celsius and nowadays at 11.5 degrees Celsius, which makes for a slower fermentation that produces very fine bubbles. They have not disgorged all the bottles and some are going to be kept for a bit longer, but the wine is sold out and in high demand. This is sharp, mineral and saline, bone dry and clean, precise, from a slightly warmer year than 2015 in the zone. It's slightly different, quite pure, with some nutty undertones, with a slightly rounder palate and quite long. The most striking feature of this is its salinity in the finish. Not surprisingly, the vines are some 200 meters away from the sea! They were helped by Raphaël Bérêche from Champagne fame to produce this sparkling wine. 20,000 bottles produced—what they can get from the almost four hectares of vineyards.

James Suckling:

A tight, focused sparkling wine with sliced pear, green apple and some dried biscuit. Medium bodied, dry and bright with a fresh finish. Dry and beautiful. Around 10% reserve wine is used and the base is aged in barrel for between six and twelve months, then 30 months in bottle. A blend of 92% hondarrabi zuri and 8% hondarrabi beltza. Drink now.
