Vignoble et élaboration

Description
Il est juste à côté du petit village médiéval de Riparbella, sur le flanc ouest d'une colline face à la mer, entouré de végétation méditerranéenne qui protège naturellement le vignoble. Cultivé selon les règles de la biodynamie.
Sol
Sol graveleux et argileux, qui donne son nom au domaine.
Vendanges
La Vendange manuelle a commencé le 5 août avec la récolte du Merlot et s'est terminée le 21 septembre avec le Petit verdot.
Vinification
Les différentes parcelles et variétés ont été vinifiées séparément dans des cuves en béton et en bois, avec des fermentations spontanées lentes et des extractions douces.
Elevage
Après la fermentation malolactique, les vins sélectionnés ont été mis en fûts, puis le vin a vieilli pendant 14 mois dans des fûts composés à 30 % de chêne neuf. Après l'élevage, le vin repose dans des cuves en béton pendant deux mois avant d'être mis en bouteille, puis il passe encore un an en bouteille.

Falstaff:

Dark ruby red colour with fine purple reflections. On the nose initially offers fine savouriness, cheese rind, cassis, blackberry, some mint, as well as fine earthy notes and Mediterranean herbs. On the palate reveals creamy notion and course, dense and finely meshed, shows juicy tannins, spans widely, comes back again and again juicy and punchy, long.

James Suckling:

This is fresh and crunchy with notes of red and dark berries, as well as spices and citrus peel. Medium- to full-bodied. It is polished and velvety with toned acidity and a polished finish. 32% cabernet franc, 24% merlot, 19% cabernet sauvignon, 18% syrah and 7% grenache. Made from biodynamically grown grapes with Demeter certification. Try from 2026, but already beautiful.

Wine Enthusiast:

The nose balances dark fruit and berries with the fresh levity of white pepper, mint and eucalyptus. On the palate, notes of vanilla bean and dark chocolate underscore the juicy broadness of the fruit, but a hot, peppery finish presents a thought-provoking contrast and prompts a meditative finish.

Closed in a yellow wax capsule, the Caiarossa 2020 Caiarossa Bianco is an oak-fermented blend of Viognier and Chardonnay that rests on the fine lees. This is a tonic and vibrant blend that shows the best side of a Tuscan white wine.
