This white is produced with the obscure variety Mantúa/Mantúo de Pilas, or Uva Rey. The 2020 Tivo comes from vines planted with the ancient, recovered variety six years ago on albariza soils. It fermented in stainless steel and oak casks, where it matured for six months. It has a light palate with moderate ripeness and only 11.5% alcohol and a low pH of 3.25, denoting good freshness. It has a nose marked by the place, with similar notes as the other wines from the zone that were produced with other varieties, spiced, medicinal and chalky. It has a delicate mouthfeel, textured and tasty, with a salty twist in the finish. Only 900 bottles produced. It was bottled in October 2023.

Blanco salino algo planito ; ni fu ni fa
Original, diferente, mineral y algo herbáceo. Ojalá la fantástica uva Rey siguiera mandando como en otros tiempos en la costa gaditana.
