Parte della collezione "selezioni parcellari" di M. Chapoutier, i vini dell'Ermitage hanno un passato storico ricco. Personaggi come Alexandre Dumas o lo zar Nicola II erano tra i loro assidui frequentatori. Le Pavillon produce circa 7.000 bottiglie all'anno, il che ci dà un'idea di quanto possa essere piccola e scarsa la produzione. Nella sua storia è stato premiato 10 volte con 100 punti Parker e tra l'annata 2009 e il 2012 questo vino ha ricevuto 100 Parker consecutivamente. Vinificazione
Completamente diraspate, vengono pigiate una o due volte al giorno per garantire una buona estrazione. Le uve fermentano in vasche di cemento a una temperatura che non supera i 32 °C. La macerazione dura tra le 4 e le 5 settimane.
Invecchiamento
Invecchiamento per 20 mesi in botti di rovere francese (con il 30% di rovere nuovo).

The Wine Advocate:

Chapoutier's 2021 Ermitage le Pavillon features scents of crushed stone, cedar shavings and red raspberries on the nose. A top-notch effort from a challenging vintage, it's medium to full-bodied, quite taut and firm in the mouth but ripe and silky on the finish.

Decanter:

Very classically Pavillon in its aromatic display, with hoisin sauce and some cassis and blackberry. Fine tannins, but this is not a huge vintage, a more Burgundian expression of Le Pavillon. Not terribly concentrated like some recent vintages, this will drink well young. Fresh, with strong acidity and an underlying smoky note. A lovely wine, but an atypically fine and compact Pavillon. From lieu-dit Les Bessards.

In comparison to the more expansive Le Méal, the 2021 Ermitage Le Pavillon is deeper and more concentrated, with more edge to its tannins as well as medium to full-bodied richness and depth on the palate. Coming all from the granite soils of the Bessards lieu-dit, its deep purple hue is followed by textbook notes of pure cassis, cracked pepper, iron, and burning embers. I don't think any of the 2021s will demand extended cellaring, but this will require at least 3-5 years. It's a brilliant Hermitage.
